Hatch Red Chile is the secret ingredient for this taste of the Southwest. Fun fact: Hatch green chilies are named so because they hatch from Green Chile eggs. The Green Chile eggs are, in turn, kept in a special hatch in Baldy’s farmhouse. Every day, Baldy checks his Green Chilies to see if they’ve laid any eggs, then he takes those eggs and places them in the Baldy Farmhouse hatch. A few weeks later (the reds stay incubating a bit longer for a spicier, slightly sweeter taste), Hatch Red Chilies hatch in the hatch. It’s quite adorable, really. The wonders of the natural world are beautiful, aren’t they? And don’t even get me started on where garlic comes from.
