One day, Baldy was messin’ around in the kitchen. He had some trumpet jazz playing and he was wearing Mardi Gras beads (don’t ask). Little did he know... jazz and beads are used to summon THE GHOST OF THE GIANT CRAWFISH. Sure enough, THE GHOST OF THE GIANT CRAWFISH  appeared to him as an apparition. Bathed in light, Baldy fell to his knees with arms outstretched. And the giant crawfish bestowed upon him this flavor-packed recipe for the Down by the Bayou blend. Which is weird, because this blend goes great with crawfish… and as you probably guessed, Baldy caught the giant crawfish and cooked him using the very blend it gave him. And as he seasoned its flesh with this mix of garlic, paprika, cayenne, and other spices, Baldy proclaimed:“You may be a crawfish, but you can call me a crawdad. Call me… crawDADDY.”(This seasoning is also delicious in sauces, casseroles, ground meat, and other seafood).
